The researches of the present work were carried out in the Environmental Chemistry laboratory, and the analyzed honey assortments come from a beekeeping farm from Rusciori village, Sibiu county. The form of beekeeping is of stationary type, consisting of 85 beehives, where all families benefit from the same microclimate and care conditions. Bee families are maintained in the vertical hive system. In order to certify the honey obtained on the farm, a series of laboratory analyzes were performed, which consisted in determining the water content, the dry matter, the acidity indices, the conductivity, the pH of the honey. of five assortments harvested in 2018 and 2019. In this paper by laboratory analysis and comparison of results obtained with quality standards in Romania and Europe, it was demonstrated the importance of bee honey and the natural qualities of the five assortments analyzed. The results were in line with the quality parameters of national and international standards and certified the originality and naturalness of each assortment, the absence of fakes or any artificial intervention of the beekeeper.
